Any hints on where to start looking if we want to contribute that kind of feature? As much as I would like to help, this seems like a big feature for someone new to the project.

As mattermost webhooks are mostly compatible with slack ones, I feel like this is a much needed feature to help team migrate away from slack, as there are a lot of bots and plug-ins that post to slack using custom emojis that you have to upload beforehand. Right now the bot would post to mattermost but the message format would be weird because of :unknown_emoji_X:, :unknown_emoji_Y: popping everywhere.

This may sound silly, but the users in my org won't consider a Slack alternative until it supports custom animated emoji. They use it... a lot.
