Edit default emojis
We use the default emojis and the custom emojis in our Mattermost. To custom it even more, we would like to edit the full set of default emojis (not create new ones) e.G. :D

The proposition could be done in several parts:
- setup in the administration panel a way to edit the picture for one default emoji
- setup a way from the administration panel to import a set of emojis to replace the default ones
- setup in the administration panel a way to reset the default emojis to the original ones
- update mobile applications to display the edited default emojis instead of mobile's emojis.

It looks like the default emoji set is the Apple set, which I'm not fond of. Would love to be able to choose our emoji set, Google Noto Color Emoji is a pretty common standard.
What would be *really* neat is if y'all came up with some sort of agreement/integration with emojipedia.org so administrators could choose from any of the sets for default emoji (e.g. https://emojipedia.org/woman-shrugging#designs). An even neater idea would be if admins could also allow users to select their own default emoji sets and override the system-specified default.
@Annika dancing parrots aren't part of the default emoji. You'd need to ask people to not add those as custom emoji, remove the existing ones, and/or prohibit people from adding custom emoji.

This idea is brilliant - I'm looking for a way to remove the default custom emojis that come bundled with Mattermost, because in my opinion they are ugly and no one uses them. Ever.
I've tried this script (https://github.com/icelander/bulk-delete-emoji) but it can only be used for user-created custom emoji. Even if these emoji appeared in the custom emoji panel for sysadmins to delete (like all the other user-submitted custom emoji) it centralises the administration for all custom emoji.

This is old, but I'd like to revisit it. We have someone with epilepsy on our team and would like to remove all emojis that can trigger her seizures (eg all the flashing dancing parrots) so she can safely use the team chat. Most people in our group are good about being mindful of not using those - but accidents happen/people slip up, and new hires need time to remember. This is more about accessibility than a 'nice to have' feature and would be nice to see it taken seriously.
