It looks like the default emoji set is the Apple set, which I'm not fond of. Would love to be able to choose our emoji set, Google Noto Color Emoji is a pretty common standard.
What would be *really* neat is if y'all came up with some sort of agreement/integration with emojipedia.org so administrators could choose from any of the sets for default emoji (e.g. https://emojipedia.org/woman-shrugging#designs). An even neater idea would be if admins could also allow users to select their own default emoji sets and override the system-specified default.
@Annika dancing parrots aren't part of the default emoji. You'd need to ask people to not add those as custom emoji, remove the existing ones, and/or prohibit people from adding custom emoji.
